My wife and I had a discussion. A discussion not an argument. Somehow in the middle of that discussion I said I would lose 65 lbs. before our baby is born. Really? Our baby is due in April. This is January. Hmmm. What have I gotten myself into? I am increasing exercise and decreasing the amount of soda and fast food that I eat. As I learn new things, I will post them here and even new recipes that I find that I can twist into a more healthy meal without losing flavor.
First…Eat breakfast everyday! Breakfast breaks the fast that your body went through while you were sleeping. That is why it is called breakfast.
Recipe – Pork Chops with Apples and Stuffing
10 min prep, Total time 50 min. Serves 6
Stove top or store brand stuffing mix for chicken – preferably low salt
1 can apple pie filling – no sugar added or one with Splenda would work well.
6 boneless pork chops 3/4 to 1″ thick.
Your oven should be heated to 375 degrees. Follow the instructions for stuffing. They are on the box.
Pie filling goes into a 13×9 baking dish that you already sprayed with cooking spray. Pork chops on top of apple pie filling, stuffing on top of pork chops. Cover with foil.
Bake 30 min. Uncover. Bake an additional 10 min or until chops are 160 degrees. This ensures the meat is done.
